Italian Pasta Salad with Marinated Bocconcini

This pasta salad is jam packed with some of my favorite ingredients and paired with marinated bocconcini and an Italian Dressing so good, you can drink it!

Ingredients

Pasta Salad

  • 1 box pasta of choice
  • 1/2 cup green pitted olives, halved
  • 1/3 cup pepperoninci's, sliced
  • 1/2 red onion, diced
  • 1 cup salami, cubed
  • 1/2 cup cherry tomatoes, halved
  • 1 bunch fresh basil, chopped
  • 1/2 cup cucumber, chopped

Marinated Bocconcini

  • 1 cup mini bocconcini
  • 1 cup bocconcini
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • salt & pepper

Italian Salad Dressing

  • 1/2 cup lite mayo
  • 1 splash red wine vinegar
  • splash olive juice
  • 1 tbsp honey
  • 1 tsp dried oregano
  • 1 tbsp Dijon Mustard
  • 1 garlic clove, grated
  • salt & pepper

Instructions

  • Bring a large pot of salted water to a boil. Once boiled, cooked pasta according to the box directions. Once cooked, set aside and allow to completely cool.
  • In a small bowl, combine marinated bocconcini ingredients. Mix together until bocconcini is tossed and set aside.
  • In a bowl, combine Italian dressing ingredients. Mix together until combined and set aside.
  • Add all pasta salad ingredients to a bowl, including the marinated bocconcini. Pour Italian dressing overtop and mix together until everything is evenly tossed. Top with fresh pepper and basil. Serve and enjoy!
