  • 1 1/2 cups ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 cup mozzarella cheese, shredded
  • 2 cups spinach, wilted
  • 1/4 tsp chili flakes
  • 2 tbsp parsley, finely chopped
  • 1 garlic clove, grated
  • salt & pepper

Additional Ingredients:

  • 1 box oven-ready lasagna sheets, cooked according to package instructions
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese (for topping)

Step-by-Step Instructions

Step 1: Roast the Butternut Squash

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and black pepper.
  3. Spread on a baking sheet and roast for 25-30 minutes until soft and caramelized.
  4. Blend the roasted squash in a food processor or blender until smooth. Set aside.
