Caprese Pasta Salad with a Honey Balsamic Vinaigrette

Ingredients
Pasta Salad
1package pasta of choice
1cupspinach, chopped
1cupBocconcini
1/2red onion, thinly sliced
1cupcherry tomatoes, halved
1/2cucumber, chopped
1bunchbasil, chopped
salt & pepper
2tbspbalsamic glaze
Honey Balsamic Vinaigrette
2tbsphoney
1tbspDijon Mustard
1/2cupolive oil
1garlic clove, grated
1/4cupbalsamic vinegar
salt & pepper
Instructions
Bring a large pot of salted water to boil. Add in pasta once boiled and cook for 10 minutes. Once cooked, run pasta under cold water to stop cooking. Add pasta to a large bowl and pat dry with a towel.
Add pasta salad ingredients to the bowl with the cooked pasta. In a large measuring cup or bowl, combine salad dressing ingredients and whisk together until combined.
Add salad dressing over top of the pasta salad and mix together until pasta is evenly coated. Drizzle balsamic glaze over top and black pepper. Serve and enjoy!
Notes
For the pasta - I opted for medium-sized shells, but I would also use rigatoni, orecchiette, or paccheri pasta!
