Add fresh herbs and toss to coast. Roast for 40-45 minutes until tomatoes burst and the onions and garlic are soft and caramelized.
  • Transfer the roasted veggies to a blender or food processor (I use @vitamix) to blend the soup together. Squeeze in the roasted garlic and add in the broth, milk, Parmesan cheese and more salt & pepper. Blend until smooth.
  • Pour the mixture into a pot over medium heat. Let simmer for 10-15 minutes, stirring occasionally. Add seasoning as needed.
  • Distribute soup into bowls and top with croutons, milk drizzle, Parmesan cheese, chopped basil and a few cracks of black pepper. Serve and enjoy!

  • 2.5 cups uncooked orzo I use @barillaus
  • 2 cups chicken or vegetable broth I use @pacificfoods
  • 1 cup heavy cream or coconut cream/milk
  • 1 lemon zested and juiced (@wonderfulseedlesslemons my fav)
  • 2 cups spinach
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese I use @parmigianoreggiano
  • Fresh parsley and basil chopped finely for garnish

Instructions

  • Season the salmon with the salmon seasonings and lemon juice. Heat olive oil in a large, deep skillet over medium-high heat. Mix until combined. then sear for 3-4 minutes per side until golden brown. Remove from the skillet and set aside. Save the salmon juices.
  • In the same skillet, melt the butter over medium heat. Add the minced garlic and shallots and sauté for 30 seconds until fragrant. Deglaze with lemon juice and cook for 1-2 minutes until brown bits at the bottom of the pan begin to lift.
  • Stir in the uncooked orzo, coating it in the garlic butter. Add the chicken broth, heavy cream, lemon zest, lemon juice, salt, and pepper, chili flakes, garlic + onion powder. Grate in parmesan cheese. Stir to combine.
  • Bring the mixture to a gentle simmer. Cook, stirring occasionally, for 8-10 minutes until the orzo is tender and the sauce thickens. Add in spinach and mix until spinach is cooked and wilted.
  • Nestle the seared salmon fillets back into the skillet. Cover and let cook for an additional 5 minutes to cook the salmon through.
  • Sprinkle in the Parmesan cheese and stir gently to combine. Adjust seasoning with additional salt, pepper, or lemon juice, if needed.
  • Garnish with fresh parsley and basil, parmesan cheese, a few cracks of black pepper and lemon juice and serve warm. Serve and enjoy!

Instructions

  • Preheat oven to 350F degrees. Spray baking sheet with cooking spray and set aside.
  • For the chicken- pound with meat mallet and season both sides. Add to air fryer at 375F degrees for 10 minutes. Let rest and check temp with thermometer – should be 165F degrees.
  • Add hamburger buns to food processor. Process until crumbs are formed. Add to baking sheet. Spray with avocado oil and toss with fresh herbs. Bake for 10-12 minutes in oven until breadcrumbs are toasted.
  • Add all dressing ingredients minus, olive oil, Parmesan cheese and black pepper to food processor. Process until dressing is formed and slowly add in olive oil. Stop food processor and add in Parmesan cheese and black pepper. Process again until combined. Chop and wash romaine and add to a large bowl. Top with Parmesan cheese, toasted bread crumbs and black pepper. Add grilled chicken and top with fresh lemon and dressing. Serve and enjoy!

Spring Pasta Salad with Lemony Caper & Shallot Vinaigrette

Indulge in the vibrant flavors of spring with this bright and flavorful Spring Pasta Salad featuring a zesty Lemony Caper & Shallot Vinaigrette. Bursting with seasonal produce, this recipe combines pasta with a medley of fresh ingredients including cherry tomatoes, shaved asparagus, artichokes, and crunchy walnuts!

Ingredients

Pasta Salad

  • 1 box of pasta of choice
  • 1/2 lemon juiced
  • 1 cup cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 1 can artichokes halved
  • 1 cup walnuts
  • 5-6 asparagus sprigs peeled
  • 1/2 cup feta crumbled
  • 1 handful microgreens

Vinaigrette

  • 1/2 lemon juiced & zested
  • 1 tbsp avocado oil
  • 2 tbsp capers
  • 1 small shallot thinly sliced
  • 1/2 cup olive oil
  • 1 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tsp red wine vinegar
  • salt & pepper

Instructions

Pasta Salad

  • Bring a large pot of salted water to boil. Once boiled, add pasta and cook according to box instructions. Once pasta is cooked, set aside until cooled.
  • Once the pasta is cooled completely, add all other pasta salad ingredients to a large bowl with the pasta. Squeeze lemon over top and top with a few cracks of black pepper.

Vinaigrette

  • In a small saucepan, add avocado oil over medium-high heat. Once oil is heated, add in capers and shallots. Season with salt & pepper. Once shallots start to sizzle, reduce heat to low-medium, continuously moving them around to ensure they don’t burn. Cook for 8-10 minutes, until capers and shallots have lightly browned and become crispy. Remove from heat and seat aside.
  • In a small bowl, combine all vinaigrette ingredients. Add in the fried shallots, avocado oil and capers. Mix until combined. Taste and season as necessary.

Assembly

  • Drizzle salad dressing overtop of the pasta salad. Serve and enjoy!

Ingredients

Chocolate Mousse

  • 1/2 cup heavy whipping cream
  • 1 cup semi-sweet chocolate chips

Whipped Cream

  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 1 tbsp powdered sugar

Instructions

Chocolate Mousse

  • Heat a small saucepan over medium-high heat. Add heavy cream to the pot to heat up for around 5-6 minutes.
  • In a separate medium-sized mixing bowl, add in chocolate chips and set aside.
  • Once the cream is heated, add to the bowl of chocolate chips. Mix with a small whisk until combined. Set aside. Sprinkle with a dash of salt and mix.

Whipped Cream

  • In a stand mixer, combine the whipping cream, vanilla extract and powdered sugar and mix for 6-8 minutes until peaks have formed and the mixture is a whipped cream consistency. Start the stand mixer on a low speed (around 2) and then gradually go up to 6-8 speed.
  • Once whipped cream has formed, save about ½ cup of whipped cream for topping.

Assembly

  • Fold the whipped cream into the bowl of chocolate chips. Ensuring that the mixture is airy and fluffy. Once combined, cover with cling wrap and place in the fridge for 10-15 minutes.
  • Remove mousse from fridge and add into short glasses. Repeat with the remaining mousse.
  • Top with a dollop of whipped cream followed by chocolate shavings and a pinch of sea salt. Serve and enjoy!

Transforming it into a delectable treat that even the pickiest of eaters can’t resist. In the past, I’ve transformed Matzah into Matzah Nachos (Machos) and Matzah Pizza (my fav)!

What is Matzah Crunch?

So, what exactly is Matzah Crunch? At its core, it’s a simple yet delectable concoction made from just a few basic ingredients. Matzah, butter (or margarine for a pareve version), brown sugar, and chocolate. The matzah serves as the crunchy base, while the caramelized brown sugar and rich chocolate add layers of sweetness and indulgence.

How to Make Matzah Crunch

The process of making Matzah Crunch is relatively straightforward- making it a popular choice for both experienced bakers and non-bakers alike. It begins by arranging sheets of matzah on a baking tray, forming a sturdy foundation for the delicious layers to come. Next, a mixture of melted butter and brown sugar is spread generously over the matzah; creating a sticky, caramel-like coating. Once baked to golden perfection, the matzah is topped with a generous layer of melted chocolate. Then it hardens into a rich, velvety shell. Finally, the assembled masterpiece is chilled until the chocolate sets, ready to be broken into irresistible shards of sweetness.

What sets Matzah Crunch apart is its versatility.   • 8-10 sheets of matzah
  • 2 1/2 sticks of unsalted butter
  • 2 1/2 cups brown sugar
  • 1 tsp vanilla extract
  • 2 cups chocolate chips
  • 1/4 cup Skor bites
  • 1/4 cup sprinkles
  • 1/4 cup slivered almonds
  • 1 tsp sea salt

Instructions

  • Preheat oven to 350F degrees. Line two large baking sheets with parchment paper and spray with cooking spray. Add matzah to the baking sheets until the sheet is covered. Break pieces of matzah to ensure there are no spaces. Set aside.
  • Heat a small saucepan over med heat and add in butter. Once melted add in brown sugar and continuously stir until combined. Once bubbling, turn the heat to low and add in a splash of vanilla extract. Continuously stir. Once the caramel is formed and thickened, pour over top of the matzah sheets. Spread caramel overtop of the matzah until the sheets are covered. Bake for 10 minutes.
  • Remove baking sheets from the oven and add chocolate chips over the top of the matzah. Let sit for 3-4 minutes and spread until all matzah is evenly coated. Add your toppings and add baking sheets to the fridge to cool for min. 1 hour. Remove from fridge and break into pieces. Serve and enjoy!

Choose a dry red wine such as Cabernet Sauvignon or Merlot, which will complement the savory notes of the meat. Pro tip: Fresh herbs like thyme, rosemary and bay leaves enhance the aroma and flavor profile of the dish.

Preparing the Short Ribs:

  • Before cooking, ensure the short ribs are thoroughly dried with paper towels to promote a golden crust during searing. Season generously with kosher salt and pepper to enhance the meat’s natural flavors.
  • Searing the short ribs in a hot pan creates a caramelized exterior, adding complexity to the final dish. Use a heavy-bottomed pot or Dutch oven (I love my Le Creuset Dutch Oven) for even heat distribution.

Building Layers of Flavor:

  • Saute aromatics such as onions, carrots, and celery to create a flavor base for the braising liquid. The vegetables will impart depth and sweetness to the dish as they simmer alongside the meat.
  • Incorporate tomato paste and Worcestershire sauce to enhance the umami notes and add richness to the sauce. These ingredients will help balance the acidity of the red wine and create a harmonious flavor profile.

  • Pour in the red wine, deglazing the pot to incorporate any browned bits for maximum flavor. The wine will infuse the meat with its bold, fruity undertones as it simmers.

  • Short Rib Ragu: Toss the shredded short rib meat with cooked pasta and your favorite pasta sauce for a comforting and satisfying meal. Add some vegetables like mushrooms, spinach, or roasted tomatoes for extra flavor and nutrients.
  • Short Rib Grilled Cheese: Layer the leftover short rib meat between slices of your favorite bread along with some cheese (such as cheddar or Gruyère). Grill the sandwich in a pan until the bread is golden brown and the cheese is melted for a gourmet twist on a classic comfort food.
  • Short Rib Pizza: Use the leftover short rib meat as a topping for homemade pizza. Spread pizza dough with marinara sauce, sprinkle on some shredded mozzarella cheese, and then add the shredded short-rib meat along with any other toppings you like. Top with homemade hot honey.   • 1 tbsp olive oil
  • 6-8 bone-in short ribs
  • 1 large garlic halved
  • 1 white onion chopped
  • 4 carrots chopped
  • 2 1/2 cups dry red wine
  • 2 1/2 cups beef stock
  • 3-4 rosemary and thyme sprigs
  • 1/2 cup parsley chopped
  • 1/4 cup tomato paste
  • kosher salt & pepper
  • Water

Instructions

  • Season short ribs with salt & pepper. Make sure to get all sides. Preheat oven to 275F degrees.
  • Heat Dutch oven over Med-high heat. Add oil to Dutch oven and add in short ribs. Make sure to not overcrowd. Sear each side until browned and remove and place on a plate.
  • Add garlic bulb in (facing down) and chopped onions and carrots. Cool down for 3-4 minutes. Once soft, add in tomato paste and mix together until combined.
  • Deglaze Dutch oven with red wine and let simmer for 3-4 minutes. add in beef broth, rosemary sprigs and season with salt & pepper. Top up the mixture with water (it should be covering the short ribs) and bring to a simmer.
  • Cover Dutch oven with lid and cook in oven for 3 1/2-4 hours until beef is fork tender.
  • Remove from oven and top with parsley. Serve with brown butter mashed potatoes. Enjoy!

Ground Beef

  • 1 lb lean ground beef

  • 1 1/2 tbsp honey
  • 1/2 tsp salt
  • few cracks of black pepper
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/4 cup lite sour cream or plain greek yogurt

Instructions

Ground Beef

  • In a large skillet or saucepan, heat oil over medium heat and add in garlic and onions. Once soft, add in peppers and jalapenos. Add 1/2 tsp salt and a few cracks of black pepper. Cook until soft, about 6-7 minutes.
  • Add in ground beef, and break it into pieces with the back of a wooden spoon. Cook for 3-4 minutes and add in seasonings. including remaining salt and black pepper. Mix until combined. Cook ground beef for another 6-7 minutes, until there is no pink and the beef is fully cooked. Remove from saucepan and add to a bowl. Cover and set aside.

Chili-Lime Vinaigrette

  • Add all ingredients to a small mixing bowl. Mix until combined. Taste and season as necessary,

Taco Salad

  • In a large salad bowl, combine all of the ingredients. Add in ground beef. Mix until combined. Squeeze lime juice over top and drizzle salad dressing all over. Toss until combined. Serve and enjoy!

  • Season the salmon fillets with salt, pepper, and your favorite herbs or spices.
  • Place the salmon skin-side down on the grill and cook for 4-5 minutes per side, or until the flesh is opaque and flakes easily with a fork.
  • Serve the grilled salmon with lemon wedges and fresh herbs for a burst of flavor.

Baking

Baking salmon is a foolproof method that results in perfectly cooked fish every time. To bake salmon:

  • 2 salmon fillets remove skin
  • 1/2 small lemon juiced
  • 1/4 cup walnuts chopped
  • 1 tbsp honey

Honey Mustard Sauce

  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 1/2 tbsp honey
  • 1/2 small lemon juiced
  • salt & pepper

Kale Salad

  • 2 cups dinosaur kale or black kale finely chopped
  • 1 tbsp olive oil
  • salt & pepper
  • 1/2 lemon juiced
  • 1/3 cup pine nuts
  • 1/3 cup currents
  • 1/3 cup parmesan cheese shredded

Salad Dressing

  • 1/4 cup olive oil
  • 1 tsp rice wine vinegar
  • 1 small lemon juiced
  • salt & pepper
  • 2 tbsp honey

Salmon Garnish

  • 1 tbsp fresh basil chopped
  • lemon juice
  • few cracks of black pepper
  • 1 tbsp honey drizzled

Instructions

  • Preheat oven to 420F degrees. Line a small baking sheet with parchment paper and set aside. Remove skin from salmon fillets and pat both sides dry with a paper towel. Season both sides with salt, pepper and lemon juice.
  • Combine honey mustard sauce in a small bowl. Brush onto the top of the salmon fillets and cover the sides. Add crushed walnuts on top of the salmon. Ensure the top is fully covered and make sure to press the walnut pieces in. Drizzle honey over the top of the two fillets. Let the salmon marinate in the fridge, covered, for min. 30 minutes.
  • Remove salmon from the fridge and bake for 12-15 minutes, until the salmon is flakey and cooked to your liking.
  • While salmon is cooking, combine all salad ingredients into a large mixing bowl and toss together until kale is evenly coated. Combine salad dressing ingredients into a small mixing bowl and mix until combined. Dress salad and mix.
  • Remove salmon from the fridge and add garnish. Plate salad and serve salmon on top of the kale salad. Serve and enjoy!

Marry Me Chicken Wings

These wings are coated in a luscious homemade hot honey buffalo sauce, crafted with a blend of fiery hot sauce and sweet honey, creating a delicious balance of heat and sweetness with every bite.

Ingredients

Chicken Wings

  • 1 lb chicken wings
  • 1 tsp old bay
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cayenne
  • 1 tbsp olive oil
  • 1 tbsp cornstarch

Hot Honey Buffalo Sauce

  • 1 stick of unsalted butter
  • 1/2 cup hot sauce
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 cup honey
  • a few dashes of Worcestershire

Garnish

  • 2 tbsp honey
  • salt & a few cracks of black pepper
  • 1 tbsp parsley chopped

Instructions

  • Preheat oven to 415F degrees. Line 2 9×13 baking sheets with parchment paper. Add a wire rack to each baking sheet and spray the wire rack with cooking spray and set aside.
  • Add chicken wings to a large mixing bowl with all of the chicken wing ingredients and seasonings. Mix together until all chicken wings are evenly coated.
  • Cover and let sit in the fridge for min. 30 minutes.
  • Evenly add chicken wings to wire racks with enough space in between each wing. Bake for 20 minutes per side. Flipping wings half way. When you flip wings, add honey to the wings and brush. Bake for another 20 minutes. Remove chicken wings from oven once crispy and cooked to your liking.
  • Heat a small saucepan over low-medium heat. Add in butter and let butter melt. Once melted, add in hot sauce and mix together until combined. Add in honey, salt, garlic powder and Worcestershire. Mix together.
  • Remove from heat after 5-6 minutes. Add to a bowl and set aside.
  • Add chicken wings to a large bowl. Drizzle with honey and toss. Add hot honey buffalo sauce to the wings and toss. Plate and top with salt & black pepper. Garnish with fresh parsley. Serve and enjoy!

One Pot Lasagna

This one pot lasagna recipe will be your new favorite weeknight dinner and holiday dish!
Course dinner, lunch, Main Course, pasta
Servings 4

Ingredients

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 white onion diced
  • 1 large garlic clove chopped finely
  • 1 lb. lean ground beef
  • 1 can crushed tomatoes
  • 2 cups water or veggie broth
  • 2 tbsp tomato paste
  • 1 cup heavy cream
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp chili flakes
  • 1 tsp oregano
  • 1 tsp dried basil
  • 1 cup mozzarella shredded
  • 1 cup parmesan cheese freshly grated
  • 10 oven-ready lasagna sheets broken into pieces
  • Salt & pepper
  • ½ baguette sliced

Garnish

  • 1 tbsp basil chopped
  • 1 tbsp parsley chopped
  • 2 tbsp ricotta
  • Salt & black pepper
  • 2 tbsp parmesan cheese

Instructions

  • Dice white onion using the Victorinox Santoku knife. Set aside.
  • Chop garlic and chop the basil and parsley with the Victorinox Chef’s knife. Set Aside.
  • Slice the baguette into 1-inch thick slices with a Victorinox Bread knife. Set aside.
  • Heat a large pot over medium heat, add olive oil and butter. Once butter has melted, add in garlic and cook for 2-3 minutes. Add in white onion and cook for 4-5 minutes, until onions have softened. Add in ground beef. Break beef into small crumbles with a wooden spoon. Season with garlic powder, onion powder, chili flakes, oregano, dried basil and salt & pepper. Mix.
  • Once the beef has browned, add crushed tomatoes, water and cream. Mix until combined. Season with salt & pepper. Bring to a simmer.
  • Once the mixture has been brought to a simmer, add in broken lasagna sheets and mix. Cook for 8-10 minutes, until lasagna noodles are soft and cooked.
  • Reduce temperature to low-medium and add mozzarella and parmesan cheese. Mix and cook for another 8-10 minutes.
  • Plate and serve one pot skillet into bowls. Garnish with ricotta, parmesan cheese, chopped basil and parsley, salt & pepper.
